For me, I have a hard time giving things up completely or using words like โI canโt have that.โ Ive learned this bc Iโve played around and discovered what happens when I use this all or nothing approach to my wellness.โฃ Iโve also learned what itโs like to โbe goodโ all week long and then the weekend comes and I treat my body like a dumpster. That didnโt work either.

WHAT YOU NEED ๐๐ผ
Plant Based Burgers (1 patty per salad) I like Beyond Meat or Impossible
1 tbsp Worcestershire sauce
salt + pepper
1/4 white onion, sliced thin
olive oil
Arugula
blueberries
honey goat cheese, crumbled
Thousand Island Dressing
HOW YOU MAKE IT ๐๐ผ
โ Preheat your grill pan to high with a little oil. Sprinkle each patty with salt, pepper, and a drizzle of Worcestershire sauce + add your white onion to the sides of the pan.
โก Grill about 4 minutes on each side until it is warmed through and crispy on the top. Allow your onions to grill/caramelize right on the pan with the burgers, too!
โข Assemble your salad. I start with arugula and add all of my toppings (grilled onions, blueberries, + honey goat cheese). Then I chop up the burger patties into smaller pieces and sprinkle on top. End with a drizzle of thousand island.
