RECIPE OF THE WEEK || Vegetarian Sunday Crock Pot Chili

The weather has been so cold this week that I’m pretty certain the only thing you need in your life right now is this chili recipe. It’s veggie friendly but also super meaty in flavor. And don’t go easy on the toppings. You’re gonna want corn bread, Greek yogurt, cheese, jalapeños...all the things. ⁣

𝐂𝐑𝐎𝐂𝐊 𝐏𝐎𝐓 𝐕𝐄𝐆𝐄𝐓𝐀𝐑𝐈𝐀𝐍 𝐂𝐇𝐈𝐋𝐈 ⁣

WHAT YOU NEED 👇🏼
▪️1 lb @beyondmeat ⁣
▪️olive oil ⁣
▪️1 white onion, chopped⁣
▪️1 jalapeño, diced ⁣
▪️2 10 oz cans rotel ⁣
▪️1 26 oz can ranch style brand beans ⁣
▪️salt, pepper, chili powder, cayenne, garlic powder ⁣
▪️topping ideas (cornbread, Fritos or tortilla chips, Greek yogurt, shredded cheddar, pickled jalapeños...)⁣


HOW YOU MAKE IT👇🏼⁣
▪️Sauté onions in olive oil until soft, my crock pot has a setting where I can do all of this in it⁣
▪️Add @beyondmeat and break up into pieces/crumbles until it is browned ⁣
▪️Stir in the rest of the ingredients (minus the toppings!)...season to your liking and cover on high for 4 hours. ⁣
