Yall. Iโ€™ve been on a total shrimp kick lately so I took my fave โ€œegg roll in a bowlโ€ and remixed it with shrimp.โฃ

WHAT YOU NEED (for 2) ๐Ÿ‘‡๐Ÿผโฃ
20 shrimp โฃ
a bag of coleslawโฃ
1/2 bag of shredded carrots (or purple cabbage too!)โฃ
2 tsp sesame oil โฃ
2 tbsp coconut aminosโฃ
2 tsp minced garlicโฃ
2 tsp ginger, gratedโฃ
2 tsp srirachaโฃ
spicy vegan mayo (I combine vegan mayo with more sriracha to taste)โฃ
Trader Joeโ€™s japanese multi purpose seasoning (Nori Komi Furikake)โฃ
optional - brown rice or cauliflower riceโฃ

HOW YOU MAKE IT๐Ÿ‘‡๐Ÿผโฃ
โ‘  Over medium heat add sesame oil. Once warm, sautรฉ coleslaw + shredded carrots/cabbage until soft.โฃ
โ‘ก Add shrimp to the skillet to pink, turning after about a minute. While that cooks, combine coconut aminos, garlic, ginger, and sriracha to make sauce. โฃ
โ‘ข Add sauce to pan and coat everything evenly.โฃ
โ‘ฃ Serve over brown rice or cauliflower rice and top with spicy vegan mayo + TJโ€™s Nori Komi Furikake seasoning blend + ENJOYYYY! โฃ
