RECIPE OF THE WEEK || Shrimp Egg Roll in a Bowl

Yall. Iโve been on a total shrimp kick lately so I took my fave โegg roll in a bowlโ and remixed it with shrimp.โฃ

WHAT YOU NEED (for 2) ๐๐ผโฃ
20 shrimp โฃ
a bag of coleslawโฃ
1/2 bag of shredded carrots (or purple cabbage too!)โฃ
2 tsp sesame oil โฃ
2 tbsp coconut aminosโฃ
2 tsp minced garlicโฃ
2 tsp ginger, gratedโฃ
2 tsp srirachaโฃ
spicy vegan mayo (I combine vegan mayo with more sriracha to taste)โฃ
Trader Joeโs japanese multi purpose seasoning (Nori Komi Furikake)โฃ
optional - brown rice or cauliflower riceโฃ

HOW YOU MAKE IT๐๐ผโฃ
โ Over medium heat add sesame oil. Once warm, sautรฉ coleslaw + shredded carrots/cabbage until soft.โฃ
โก Add shrimp to the skillet to pink, turning after about a minute. While that cooks, combine coconut aminos, garlic, ginger, and sriracha to make sauce. โฃ
โข Add sauce to pan and coat everything evenly.โฃ
โฃ Serve over brown rice or cauliflower rice and top with spicy vegan mayo + TJโs Nori Komi Furikake seasoning blend + ENJOYYYY! โฃ
