RECIPE OF THE WEEK || Healthy Baked Tacos

I used to think that you had to deprive yourself of “bad food” in order to be healthy. I’ve realized that that way of thinking…labeling foods as “good” or “bad”...is toxic. When we say we ate something bad, inherently we believe WE ARE BAD. That is not true, friends. ⁣⁣⁣⁣⁣

⁣⁣⁣⁣⁣⁣

What serves me better is thinking of foods in regards to how they make me feel. Some foods bless me long term. Some foods bless short term cravings. ⁣⁣⁣⁣⁣⁣

For the record… Tacos bless me greatly. ⁣⁣⁣⁣⁣⁣

⁣⁣

But here’s the kicker…I feel BETTER when I make them at home. When I know exactly what is going into my recipe. I’ve learned this thru getting it wrong. I’ve gone out. Indulged. And come home feeling too full, sleeping poorly, and then waking up not feeling my best. ⁣⁣⁣

Basically FOOD MATTERS. That’s why this October I’m focusing on how foods make us FEEL in my sisterhood. Not dieting or depriving or striving for perfection. Simply showing up and making meals that taste amazing, trying new recipes, having a game plan each week in the kitchen, and taking an honest inventory of how you FEEL when you fuel your body with clean foods vs not. ⁣⁣⁣⁣⁣⁣

WHAT YOU NEED 👇🏼⁣⁣⁣⁣⁣⁣

Hard taco shells⁣⁣⁣⁣⁣⁣ (I use Siete Grain Free Taco Shells)

1 lb Beyond Beef⁣⁣⁣⁣⁣⁣

1 packet taco seasoning (or make your own!)⁣⁣⁣⁣⁣⁣

1 small can diced green chiles + 1/2 cup water⁣⁣⁣⁣⁣⁣

Shredded Sharp Cheddar⁣⁣⁣⁣⁣⁣

Toppings - I love greek yogurt, shredded lettuce, pico, TJ’s green jalapeño sauce, and avocado⁣⁣

HOW YOU MAKE THEM 👇🏼⁣⁣⁣⁣⁣⁣

1. Preheat oven to 350 degrees ⁣⁣⁣⁣⁣⁣

2. Start by browning your meat in a skillet. ⁣⁣⁣⁣⁣⁣

3. Add taco seasoning, green chiles, + water.⁣

4. Warm until it’s heated thru and the water has evaporated⁣⁣⁣⁣⁣⁣

5. Fill shells with mixture and stack in a baking dish. ⁣⁣⁣⁣⁣⁣

6. Top with cheese + bake uncovered for 10 min (or according to the directions on your shells…some go faster!) ⁣⁣⁣⁣⁣⁣

7. Add your favorite toppings + ENJOYYYY!
