RECIPE OF THE WEEK || Copycat Starbucks Kale + Mushroom Egg Cups

The other week I took myself on a little morning date to Starbucks and became OBSESSED with their kale + mushroom egg bites. ⁣

I went on an internet quest to find a dupe and as I usually do…took the recipe and made it my own. ⁣

Perfect for weekend prep. And a quick (healthy) + delish brekkie. Oh…and way cheaper than hitting up the bucks every morning 😜😉⁣

𝐊𝐚𝐥𝐞 + 𝐌𝐮𝐬𝐡𝐫𝐨𝐨𝐦 𝐄𝐠𝐠 𝐂𝐮𝐩𝐬 (𝟔 𝐜𝐮𝐩𝐬)⁣

𝗪𝐡𝐚𝐭 𝐲𝐨𝐮 𝐧𝐞𝐞𝐝 👇🏼⁣

2 cups chopped kale ⁣

1/2 container of mushrooms finely chopped ⁣

1 tsp garlic minced⁣

3 whole eggs ⁣

3 egg whites ⁣

1/4 cup shredded sharp cheddar ⁣

1/4 cup plain greek yogurt ⁣

1 tsp hot sauce⁣

1 tsp italian seasoning ⁣

1/4 tsp salt⁣

1/4 tsp pepper ⁣

non stick coconut spray ⁣

𝐇𝐨𝐰 𝐲𝐨𝐮 𝐝𝐨 𝐢𝐭 👇🏼⁣

① Preheat your oven to 300 degrees. ⁣

② Heat skillet on medium heat and add a little oil, mushrooms, and garlic. Cook thru and add kale. Stir until kale is wilted. ⁣

③ Add eggs, cheese, greek yogurt, hot sauce, and seasonings into a blender and blend until smooth (about 30 seconds).⁣

④ Spray a muffin tin with non stick coconut spray and pour mixture evenly into 6 cups. It’s easy to double this if you’d like to use the whole muffin tray, too! ⁣

⑤ Bake for 30 minutes and enjoy!!! I will store extras for 2ish days in a sealed container in the fridge.
