RECIPE OF THE WEEK || Buffalo Cauliflower Sandwiches

You can totally make buffalo cauliflower wings but I promise you theyโve got nothing on this sandwich. It was one of the first meatless swaps we made back when we first began exploring how foods made us feel and it still stays on rotation in our house 5 years later. โฃโฃ

WHAT YOU NEED ๐๐ผ
1 head of cauliflowerโฃโฃ
olive oilโฃโฃ
salt/pepperโฃโฃ
1/2 cup noble made buffalo sauce โฃ(I like Medium)โฃ
buns of choice โฃโฃ
lettuceโฃโฃ
tomatoโฃโฃ
red onionโฃโฃ
blue cheese spread โฃ(recipe below)โฃ
extra blue cheese for topping โฃโฃ

HOW YOU MAKE IT ๐๐ผ
โ Preheat your oven to 450 degrees.โฃโฃ
โก Cut your head of cauliflower in half and then cut two 1/2 inch steaks from each of the sides. Trim off an green leaves at the base, but leave most of the stem in tact. You can use the remaining cauliflower to make cauliflower nuggets/wings later in the week!โฃโฃ
โข Place your cauliflower steaks onto a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 25-30 minutes, turning once, halfway through.โฃโฃ
โฃ While that is roasting, prepare the blue cheese spread. Combine 1/2 cup vegan Mayo + 1/2 cup plain Greek yogurt with finely chopped carrots + celebrate (about 1/4 cup each). Add salt and pepper to taste + stir to combine.โฃโฃ
โค Pour buffalo sauce over cauliflower during final 10 minutes of roasting, once you have flipped your cauliflower. โฃโฃ
โฅ During the final 2 min of roasting I will add my buns to the oven to toast and top my cauliflower steaks with a sprinkle of blue cheese to melt. โฃโฃ
โฆ Remove everything from oven and assemble! Add the blue cheese spread onto a bun. Add lettuce, tomato, red onions, and then finish off with a buffalo cauliflower steak. โฃโฃ
