RECIPE OF THE WEEK || BBQ "chicken" Stuffed Sweet Potatoes

BBQ “chicken” STUFFED SWEET POTATOES ⁣

Lunch prep is one of those things that just makes life easier. And right now I feel like we’re in that weird space between summer and fall. Where we CRAVE COMFORT foods but the weather reminds us we are very much still in summer. This recipe is the perfect balance of comfort food and summer flavor. WHAT YOU NEED 👇🏼
▪️ @drpraegers bbq plant based tenders ⁣
▪️4 sweet potatoes ⁣
▪️1 can of corn⁣
▪️1 can of black beans ⁣
▪️red onions, diced⁣
▪️olive oil + s/p⁣
▪️toppings: green onions, shredded cheese, + bbq sauce ⁣


HOW YOU MAKE THEM 👇🏼
▪️Bake/air fry your sweet potatoes + tenders (you could totally do this with chicken too) ⁣
▪️drain and rinse your corn + black beans. Combine in a bowl with red onions (you decide how much you like) and drizzle with a little oil and salt and pepper to taste ⁣
▪️assemble your potatoes 👉🏼 In a meal prep container place one potato and open it down the center to stuff. Add bean mixture. Top with tenders (I like to chop mine up!). ⁣
▪️Sprinkle cheese + green onions and then drizzle with your FAVE bbq sauce.⁣
