RECIPE OF THE WEEK || French Lentil Soup

Okay not feeling my best today and wasnβt in the mood to share much on social π« π€ but then I realized that tonight MOST DEFINITELY calls for this lentil soup to hit the comfort spot and figured Iβd share. Itβs one of my go to soupβs anytime bc it comes together in about a half hour.
WHAT YOU NEED ππΌ
2 tbsp olive oil
1 carton of mirepoix from @traderjoes ORβ¦
1 onion, finely diced
1 large carrot, diced
2 ribs celery, chopped
2 cloves crushed garlic
3-4 sprigs fresh thyme
1-2 bay leafs
1-2 sprigs fresh rosemary
1 cup dry green (french) lentils
6 cups veggie broth
salt + pepper
HOW YOU MAKE IT ππΌ
β Heat oil in a big pot over medium low heat then add the onions, celery and carrot and season with sea salt + pepper. Saute for a minute or 2.
β‘ Add the herbs and garlic to the pot and saute with the veggies for 5-7 minutes... until you can smell the fragrance of the herbs in the air (literal best part of this soup!)
β’ Add the lentils and broth to the pot and bring to a boil. Then reduce to simmer for 30 minutes.
β£ Remove fresh herbs from the pot and serve with crusty bread (trust me).
