RECIPE OF THE WEEK || French Lentil Soup

Okay not feeling my best today and wasnโ€™t in the mood to share much on social ๐Ÿซ ๐Ÿค’ but then I realized that tonight MOST DEFINITELY calls for this lentil soup to hit the comfort spot and figured Iโ€™d share. Itโ€™s one of my go to soupโ€™s anytime bc it comes together in about a half hour.

WHAT YOU NEED ๐Ÿ‘‡๐Ÿผ

2 tbsp olive oil
1 carton of mirepoix from @traderjoes ORโ€ฆ
1 onion, finely diced
1 large carrot, diced
2 ribs celery, chopped


2 cloves crushed garlic
3-4 sprigs fresh thyme
1-2 bay leafs
1-2 sprigs fresh rosemary
1 cup dry green (french) lentils
6 cups veggie broth
salt + pepper

HOW YOU MAKE IT ๐Ÿ‘‡๐Ÿผ

โ‘  Heat oil in a big pot over medium low heat then add the onions, celery and carrot and season with sea salt + pepper. Saute for a minute or 2.

โ‘ก Add the herbs and garlic to the pot and saute with the veggies for 5-7 minutes... until you can smell the fragrance of the herbs in the air (literal best part of this soup!)

โ‘ข Add the lentils and broth to the pot and bring to a boil. Then reduce to simmer for 30 minutes.

โ‘ฃ Remove fresh herbs from the pot and serve with crusty bread (trust me).
