RECIPE OF THE WEEK || Black Bean, Corn, + Avocado Enchilada Bake

I realized this week that one of my FAVE recipes hasnβt made itβs way to the feed. UNACCEPTABLE. π I love to make this one for dinner on Sundays and enjoy leftovers for either quick grab and go lunches OR a quick weeknight meal. Either way I know youβre gonna LOVE this one. β£

WHAT YOU NEED ππΌ
βͺοΈ1 can black beans β£β£, drained + rinsedβ£
βͺοΈ1 can corn, drainedβ£
βͺοΈ1/4 red onionβ£β£β£, dicedβ£
βͺοΈcilantro, about 2 tbsp choppedβ£
βͺοΈ3-4 avocados β£
βͺοΈlime (divided use) β£
βͺοΈsalt + pepperβ£β£β£β£
βͺοΈchili powder β£β£β£β£
βͺοΈcuman β£
βͺοΈgarlic powderβ£
βͺοΈred pepper flakes β£
βͺοΈ1 jar of your fave red enchilada sauceβ£
βͺοΈ8 corn tortillas β£
βͺοΈshredded cheddar cheeseβ£
βͺοΈtoppings of choice (I love pico, greek yogurt, TJβs jalapeΓ±o sauce, + hot sauce or salsa) β£β£β£β£

HOW YOU MAKE IT ππΌ
β pre heat oven to 375β£
β‘ In a medium bowl add black beans, corn, red onion, and cilantro. Squeeze 1/2 a lime and add in salt/pepper to taste, 1 tsp chili powder, 1 tsp cumin, 1 tsp garlic powder, + 1/2 tsp red pepper flakes. Stir to combine and set aside. β£
β’ In a small bowl, mash your avocados. Squeeze the other 1/2 of your lime and add in salt/pepper to taste, 1 tsp chili powder, 1 tsp cumin, 1 tsp garlic powder, + 1/2 tsp red pepper flakes. Stir to combine and set aside.β£
β£ Begin assembling the casserole. At the bottom of your casserole dish add a small amount of enchilada sauce to coat the bottom. Place 4 of the tortillas as the base so they overlap (I tend to cut them so I make sure the dish is fully covered). Top with half of the remaining sauce. β£
β€ Add 1/2 of the avocado and use a spatula to spread evenly. Top with 1/2 of the black bean mixture and a sprinkle of cheese. β£
β₯ Place the remaining 4 tortillas over the first layer and REPEAT with the remaining ingredients. Sauce. Avocado. Black Bean Mixture. Cheese. β£
β¦ Cover with foil and cook for 30 minutes. Remove foil and cook for 10 - 15 more minutes. If you want it extra bubbly you can broil at the end, too! β£
