I love making muffins on a Sunday as a great grab and go breakfast option to start the week. These are inspired by one of my fave food bloggers, with a couple swaps to make them even healthier. Super simple + super delish. AND the bonus is youโ€™ll feel better making these from scratch AND save money not heading to your fave coffee shop each morning. ๐ŸคŒ๐Ÿผโฃ

1/2 cup melted coconut oilโฃ

1/4 cup honeyโฃ

2 tsp pure vanilla extractโฃ

2 eggsโฃ

3 or 4 ripe bananas, mashedโฃ

1/4 cup almond milkโฃ

2 1/4 cups all-purpose flourโฃ

2 tsp baking powderโฃ

1/2 tsp baking sodaโฃ

1 tsp cinnamonโฃ

unsweetened coconut flakes for sprinkling on topโฃ

โ‘  Preheat the oven to 350. Line muffin tin with paper liners. In a large bowl, combine the coconut oil, honey and vanilla. Add the eggs, one at a time and stir until fully incorporated. Add the mashed bananas and almond milk and stir until mixed well.โฃ

โ‘ก Add flour, baking powder, baking soda, and cinnamon and stir until combined.โฃ

โ‘ฃ Divide the batter evenly among the muffin cups, filling about three-quarters of the way. Sprinkle with coconut flakes and bake 20 - 22 minutes. Enjoy!!! โฃ
