I love making muffins on a Sunday as a great grab and go breakfast option to start the week. These are inspired by one of my fave food bloggers, with a couple swaps to make them even healthier. Super simple + super delish. AND the bonus is youโll feel better making these from scratch AND save money not heading to your fave coffee shop each morning. ๐ค๐ผโฃ

1/2 cup melted coconut oilโฃ
1/4 cup honeyโฃ
2 tsp pure vanilla extractโฃ
2 eggsโฃ
3 or 4 ripe bananas, mashedโฃ
1/4 cup almond milkโฃ
2 1/4 cups all-purpose flourโฃ
2 tsp baking powderโฃ
1/2 tsp baking sodaโฃ
1 tsp cinnamonโฃ
unsweetened coconut flakes for sprinkling on topโฃ

โ Preheat the oven to 350. Line muffin tin with paper liners. In a large bowl, combine the coconut oil, honey and vanilla. Add the eggs, one at a time and stir until fully incorporated. Add the mashed bananas and almond milk and stir until mixed well.โฃ
โก Add flour, baking powder, baking soda, and cinnamon and stir until combined.โฃ
โฃ Divide the batter evenly among the muffin cups, filling about three-quarters of the way. Sprinkle with coconut flakes and bake 20 - 22 minutes. Enjoy!!! โฃ
